Authentic Spanish tapas accompanied by specially selected wines

Taberna Saltpeter has been set up by David Jimenez and Maddie Bryett who moved back to Suffolk in 2018 and are now following their dreams of opening up a small restaurant style business selling what they love and showcasing David’s passion for cooking and Maddie’s love of wine.

Maddie, an Ipswich girl, has seen the wine industry as a whole with experience in the commercial sector, studying viticulture and oenology and working in the vineyards in France, she has taken part in several harvests and understands the passion needed at producer level to get an authentic expression of wine. She then worked in retail, then out in the field selling for one of the UK’s largest importers of “real wine” to some of London’s coolest bars, restaurants and shops. 

David is from Malaga and has worked in Hospitality for most of his adult life, as front of house, in the kitchen and has specialised in Spanish restaurants, some of his connections are considered some of the best people in the Spanish restaurant scene. He set up and had a huge success with a restaurant called La Fabrica with a modern take on Spanish food and wine. David’s connections mean we are sourcing excellent produce directly from Spain from producer to plate and we aim to bring authentic Tapas at affordable prices. 

David’s cooking is all about simplicity letting the products sing for themselves and the same ethos extends to the wine.
